Classic Dijon Vinaigrette

This vinaigrette recipe replaces honey with maple syrup. The result is a delicious vinaigrette that is great not only over greens, but also grains and other vegetables.

1/3 cup Dijon mustard

¼ cup grade B maple syrup

1/3 cup rice vinegar

2/3 cup extra virgin olive oil

salt & pepper


Mix together the Dijon, syrup and vinegar

Slowly pour in the olive oil and whisk

Season with salt and pepper to taste

Use a flavored vinegar in place of the rice vinegar.
For poppy seed dressing use fresh lemon juice in place of half of the rice vinegar and add ½ tsp. poppy seeds
Use 1/3 cup agave nectar in place of the maple syrup
