This is an easy vegan version of the classic salad dressing. Try it on salads, sandwiches or as a dip.
1/2 cup Just Mayo or Vegenaise (or use the homemade vegan mayo recipe in the additional recipe notes below)
2 to 3 T organic catsup
1 to 2 T drained pickle relish (use sweet, dill or zucchini relish)
dash of Tabasco (red or green)
1 to 2 T finely chopped onion (optional)
Mix all of the ingredients together and stir to blend.
Add salt and pepper to taste.
You can also add a pinch of smoked paprika or a little horseradish.
This easy recipe is from Valerie Wilson. For a unique taste, substitute chili sauce for the catsup.
If you want to make your own vegan mayo, simply blend until creamy 1 box silken tofu with 2 Tablespoons fresh lemon juice, 1/2 teaspoon dry mustard, 1 teaspoon agave and a dash of sea salt.
