Tomato Salsa

This award winning salsa is from the Almost Vegan Cooking School.

4 tomatoes, chopped

½ red onion, chopped

2 Serrano Chiles, seeds removed, diced

1 T minced garlic

juice of 1 lemon

1/3 cup cilantro

½ tsp. sea salt

¼ tsp. cracked pepper

¼ tsp. cumin

1 tsp. olive oil


Combine all of the ingredients in a blender and pulse.

Pour the salsa into a medium bowl and let it rest for 1 hour to give the flavors time to develop.
