Tomatillo Chili

We recently saw the movie Unsupersize ME, which follows Tracy Ryan in her quest to regain her health and life through plant-based foods. Carlos Asse, who produced and directed the movie, guides Tracy on her year-long journey during which she sheds an amazing 200 pounds! This is one of Carlos’ go-to plant-based meals.


1 bunch of green onions thinly sliced

1 – 16 oz. jar of Salsa Verde (organic!)

2- 15 oz. cans of black beans (drained and rinsed)

1- 15 oz. can of corn (drained and rinsed)

1 medium spanish onion

1 cup of diced green bell pepper

1 cup of diced red bell pepper

1 cup of diced yellow bell pepper

4 cloves of garlic minced

1 cup of fresh chopped cilantro

2 cups of fresh diced tomatoes


1. Sauté peppers, onion, garlic, and 1/2 of the green onion in a large pan over medium heat for about 3-5 minutes or until softened

2. Add salsa, beans, corn and 1/2 cup water. Bring to boil, then reduce heat to medium and let simmer for 20 minutes

3. Garnish with tomatoes and cilantro and green onion

Personal seasoning: I also squeezed some lime and added red pepper flake to mine, but I tend to do that to everything I eat!
