Vegan Ranch? You bet! You don't need dairy to make this classic dressing!
1 cup water
½ cup raw cashews (soak in warm water for a few hours if you are not using a high speed blender)
½ cup pine nuts
2 T nutritional yeast
2 T raw unfiltered apple cider vinegar
1 clove garlic
½ tsp. sea salt or to taste
pinch of mustard powder
Combine all ingredients in a blender and process until smooth.
Add fresh ground pepper to taste.
After blending the dressing add in optional spices like dried parsley and chives.
Refrigerated in a glass container, this dressing will keep for several days.
