Lettuce Wraps

These tofu lettuce wraps and delicious, with a variety of flavors to pique the taste buds. The filling is warm and savory, with a touch of sweetness. It contrasts wonderfully with the cool and refreshing lettuce shell. Both the lettuce and the water chestnuts add a nice crunch. Your guests will never know the preparation was so easy!

Ingredients

4 oz. baked tofu, finely chopped

1 can (5 oz.) water chestnuts, finely chopped

2 green scallion onions, finely chopped

2 cloves garlic, finely chopped

1 T ginger root, finely chopped

1 T olive oil

2 T soy sauce or Tamari

2 T sweetened chili sauce

lettuce leaves

Directions

Sauté the first 5 ingredients in the olive oil for 5 to 10 minutes over medium heat, until the tofu is slightly browned

Add the soy and chili sauces, and continue cooking for several more minutes until the excess moisture has evaporated and the sauce coats the other ingredients

Spoon onto crisp lettuce leaves and serve immediately

All the measurements are approximate. You should feel free to add other ingredients and to vary the amount of the garlic, ginger, soy sauce and chili sauce to taste.
