Jill’s Brownies

This recipe is courtesy of Jill's Restaurant in the St. Julien Hotel in Boulder. Every Friday from 11:30 to 2:00, Jill’s offers the Ooh Là Là Vegan Lunch Buffet which features an ever-changing array of vegan dishes made using only the freshest ingredients.


2 cups All Purpose flour (can use Gluten Free flour and 1/2 tsp xanthan gum for gluten free option)

1 cup water

1 cup sugar

1 cup brown sugar

1 tsp vanilla

¾ cup cocoa powder

½ cup vegetable oil

½ tsp baking powder

½ cup chopped walnuts

½ cup dark chocolate chips


Cook water and ½ cup flour over low heat until a paste forms, remove from heat and cool

Mix together, sugar, salt, vanilla, cocoa powder and vegetable oil, add flour-water mix, mix well to combine

Add remaining flour, baking powder, nuts and chips. Mix to incorporate.

Spread into prepared, oiled, lined pan. Bake at 350 degrees for 25 min.

Let cool completely. Cut and serve
