Creamy Broccoli Soup

Even people who don’t like broccoli will like Gift’s soup. Top each bowl with a sprinkling of wild rice sticks.

2 T Earth Balance or other vegan butter

1 onion, chopped

4 cups water

1 bunch broccoli, chopped with the stem

1 large potato, peeled and cubed

2 cubes of Rapunzel Vegetable Bouillon (or other veggie bouillon cubes)


Melt the Earth Balance in a dutch oven and fry the onion until it is soft and transparent.

Add the water, potatoes and bouillon cubes.

Bring to a boil, then add the broccoli.

Reduce the heat, cover and simmer until the potatoes and broccoli are tender.

Transfer the soup to a food processor and puree for several minutes until the mixture it very creamy.
